Genièvre from Houlle: Persyn Distillery

This year we are accommodated in a house owned by an architect who offers his bedroom and family connection via Airbnb. This has advantages not only for young people, but also for older people like me. This architect strongly recommended that we visit the Persyn Distillery in Houlle, a small village northwest of Saint-Omer.

Houlle is a small village in Audomarois, on the banks of the river of the same name. For a long time, the inhabitants lived from agriculture, before the construction of roads, waterways and other activities. The Decocq family founded the Houlle genievrerie there in 1812.

Today, Distillerie Houlle is an authentic traditional know-how rooted in its terroir, the result of more than two centuries of work and experience. But it is also a whole team: Alexandra, Stéphanie, Christophe, Jean-Noël and Lionel. We are committed to preserving this know-how and heritage the gastronomy of the Hauts de France that we represent, but we do not prevent ourselves from creating, inventing, inventing and searching for new flavours and new flavours tastes. This philosophy was rewarded on February 15, 2018 at the World Gin Awards in London, where two of our genevièvres were rewarded: the Monbazillac with a gold medal and the Brut de Fût with the title "The best genever in the world".
